The impacts of climate change are being felt here and now. From floods in Germany to wildfires in Greece and Turkey; water shortages in Northern Europe and even heatwaves in Siberia. Intensifying weather events threaten our way of life, with severe impacts on people’s health, livelihoods and assets.

To help accelerate the Europe’s climate adaptation strategy and meet ambitions to become the world’s first climate-neutral continent by 2050, the European Commission has awarded a new flagship project named IMPETUS. Its objective: turn climate commitments into tangible, urgent actions to protect communities and the planet. The IMPETUS project will help accelerate Europe’s response to climate change and develop innovative measures to make its regions more resilient.

Motivated and multidisciplinary teams in research, policy, industry and civil society will address real-world challenges in seven test regions across Europe. Together these represent all the continent’s bio-climatic regions: Arctic, Atlantic, Boreal, Coastal, Continental, Mediterranean and Mountainous.

These teams will analyse and scale the most effective solutions to protect water, agriculture, fisheries, infrastructure and health. Working with local policy-makers, businesses and communities will help to make them a success.

Within the seven regional test beds – one in each bioclimatic region of Europe – the Valle dei Laghi and Cantina Toblino were identified to represent the mountainous area and seek innovative solutions to be used in the future to tackle climate change.

“93% of Europeans consider climate change a serious problem. To respond effectively, we need to adapt our policy actions and strategies to new climatic situations. We need to better understand when and how to act in a transition to green economy.” says Aitor Corchero, Eurecat senior researcher and project technical coordinator. “IMPETUS is important because it demonstrates the concrete actions we all urgently need to take to protect the environment and the economy. It will work on solutions for a range of climate conditions ““ from the artic to the Mediterranean basin ““ empower communities and protect key systems like water, agriculture and infrastructure.”

Cantina Toblino will play a key role in the Impetus project, in particularly with regard to the development of an applicable and scalable Innovation Package in different mountain areas in a national and international context. This objective will be achievable thanks to the contribution of various stakeholders and through the creation of an European network of institutions and private bodies able to contribute to the realization of the project as well as the promotion of the same in various communities of reference. The main ambitious is to be able to increase material and immaterial know-how as well as to augment the sense of responsibility regarding the main critical points and vulnerabilities related to climate change.

The impact we would like to see at the end of this path is the dissemination and adoption of some of the best practices identified over the next 4 years in an European context aimed at encouraging climate and social resilience. Cantina Toblino will be the reference point and the spokesperson of a series of initiatives able to lead to the environmental and socio-economic protection of mountain areas.

2020 was certainly a difficult year for everyone. Cantina Toblino is a cooperative that has its roots in the production and enhancement of wines well aware of its responsibility in guaranteeing the well-being of the territorial community. Always in compliance with the rules imposed at national and local level, the well-known reality of the Valle dei Laghi has never been discouraged by events, relaunching and guaranteeing its customers high-level products and services also through its own Hosteria Toblino.

Under the guidance of Franco Zanella (pictured), director of Hosteria Toblino, this reality located in the heart of the Valle dei Laghi has now become a reference point for Trentino food and wine. In fact, 2020 ended with numerous awards obtained this year by both Cantina Toblino for its excellent wines, obtaining the major awards from Gambero Rosso, Slow Wine, Ais Vitae, Vini Buoni d’Italia, Veronelli, Wine Hunter Awards, James Suckling , Decanter, both by Hosteria Toblino included in the prestigious Michelin Guide Italy 2021, Italian Restaurants and Italian Wine Shops by Gambero Rosso, Il Golosario by Paolo Massobrio.

Recently Sebastian Sartorelli (in the photo below), chef of Hosteria Toblino, also appeared in some TV programs distributed on the main Italian television networks such as Melaverde during a special dedicated to oil from Garda and another splendid reality della Valle dei Laghi such as Maso Botes and Cuochi d’Italia – The Trophy of the Regions representing the traditional cuisine of Trentino-Alto Adige. With the aim of continuing a process of growth and enhancement that has been underway for several years, Hosteria Toblino looks forward to 2021 that has just begun with great hope. After a period of forced stop during the Christmas holidays, Hosteria Toblino reopens its doors to its customers on Tuesday 12 January from 12 to 14.30.

Chef Sebastian Sartorelli and Franco Zanella take the opportunity to inaugurate the new winter menu: a creative menu with typically Trentino flavors combined with elegant glasses of wine that we invite you to discover as soon as possible and that we are sure will be able to surprise even the most demanding palates.

Not everyone knows this, but Chef Sebastian Sartorelli, in addition to being an established chef in the Trentino landscape, is a well-rounded artist who also delights on canvas in his spare time. This winter menu was in fact decorated with reproductions of some of his works made with the dripping technique, which allows the artist to capture the energy of the moment and feel part of the work. According to the regulations in force, for now the restaurant will be open only for lunch from Tuesday to Friday from 12 to 14.30.

James Suckling is one of today’s leading wine critics whose reviews are read and respected by wine lovers, serious wine collectors, and the wine trade worldwide. Suckling spent nearly 30 years as Senior Editor and European Bureau Chief of’ Wine Spectator. On his departure from the magazines, Forbes called the Los Angeles-born writer “one of the world’s most powerful wine critics.”

In late 2010, Suckling launched his website that evolved from him seeing a need for wine to be communicated in a more modern way. The crux of the site are his tasting notes, and James and his team of critics rate everything with the 100-point scale. The site also offers subscribers video content from wineries around the world.

Reasearch in the archive shows that no white wine from Trentino has ever received 92 points from James Suckling. This is a source of great pride and satisfaction for all of us, for our members and for the whole Valle dei Laghi.

 

The Vino Santo Trentino, “passito dei passiti”. A unique wine, inextricably linked to the history and oenological tradition of the Valle dei Laghi. A rarity with a production so small that it is nicknamed “gold of the Valle dei Laghi”. A pearl to be preserved and valued with care. For Cantina Toblino it represents the highest expression of the passion and patience necessary for the care of the vineyard, of the vinsantaia where drying occurs on the “aréle”, of the barrel cellar where it refines and ages for almost 15 years.

A perfect combination of local specialties and creativity: this is how Hosteria Toblino from Madruzzo (Trento) starts again. After the uncertainty of the future with which we have all dealt with in this period, the director Franco Zanella, in agreement with the Board of Directors of Cantina Toblino, has decided to open its doors to customers starting on June 4.

The staff of Hosteria Toblino is ready to welcome customers in compliance with the hygiene and health standards in force to prevent their own and others’ health, giving everyone the opportunity to spend pleasant moments with us with the right precautions.

Hosteria Toblino and chef Sebastian Sartorelli will present a new summer menu, divided into meat, fish and vegetarian proposals to satisfy all consumer tastes. As always there will be the wines of Cantina Toblino, in particular the new selezioni Vènt , presented a few weeks ago digitally on the Microsoft Teams platform. Cantina Toblino, Madruzzo 8 Giugno 2020 – The first Digital Cheese Experience which saw the joint participation of Latteria San Pietro, Cantina Toblino e Hosteria Toblino took place on Saturday 6 June 2020 on the Microsoft Teams platform. Thanks to the close partnership with Microsoft Italia within the project “Ambizione Italia” and Si-Net, Latteria San Pietro has involved in this splendid initiative not only Cantina and Hosteria Toblino but also an important audience of Food&Wine Bloggers composed of:

All actively participated in the digital experience, being able to get to know Latteria San Pietro, the production of Grana Padano from the cultivation of stable meadows to the long seasoning process. An unforgettable experience that ended with the creation and tasting of a dish together with the chef Sebastian Sartorelli. The bloggers were thus able to know the secrets of the production of this exceptional cheese, the aromas and perfumes it releases during the tasting. The chef Sebastian Sartorelli and our guests then each personally interpreted a splendid “Beef Tartare with Grana Padano Dop Selection from Hay, Green Asparagus and Ginger” proposed by our chef. To seal the whole combination with one of the excellence of Cantina Toblino: nosiola Largiller 2012. An exceptional wine, which for its characteristics of complexity, freshness, flavor and elegance perfectly matched the taste of this particular and unique Grana Padano Dop from Latteria San Pietro.

Who said that tradition and innovation don’t go together? Who said that in this historical period people cannot visit and discover Italian dairies?

We are in the high Mantuan plain, precisely in Goito, where the San Pietro Dairy produces over 60,000 forms of Grana Padano per year. Thanks to an innovation process, a peculiarity that has always characterized the company, San Pietro has installed a system of cameras that runs throughout the production chain, from the field to the maturing warehouses.
It is thanks to this technology and the partnership with Microsoft Italy and Si-Net that the first “Digital Cheese Experience” is born. In fact, Microsoft Italy has launched “Ambition for Italy” #DIGITALRESTART “, a storytelling project to tell the excellence of Made-in Italy where craftsmanship blends with digital innovation.

So on Saturday 06 June 2020 at 10.00 am by simply clicking on the link on the dairy’s social media channels, the whole boot can virtually enter the San Pietro dairy, learn about the stable meadows of the Mincio valley, see a tasting di Grana Padano Selection from hay and get to know the reality of Cantina Toblino, partner of Latteria San Pietro.
The tour will include the presentation and demonstration of a recipe by chef Sebastian Sartorelli, from Hosteria Toblino, combined with the “Largiller – Nosiola” wine.

“This event represents the revolution of gastronomic tourism and the presentation of our realities” comments the president of San Pietro Stefano Pezzini “Through this model of
experience even a person on the other side of the world can see the dairy live and taste the product guided by an expert. ”

The event will be attended by 8 food bloggers from various Italian regions who will accompany during the event and show us their interpretation of the recipe by chef Sebastian Sartorelli.
The participants of the event will be involved in some surveys during the 45 minutes of the event.

Cantina di Toblino’s Vino Santo DOC 2003, a true heritage wine of Valle dei Laghi, was named best sweet wine of the year 2020 by the Italian magazine Gambero Rosso. A great recognition for Cantina di Toblino’s Vino Santo Trentino DOC 2003, which, after the Tre Bicchieri, now also receives the award “Best Sweet Wine of Italy”.

 

This wine was forgotten for a long time, perhaps for lack of knowledge of what lies behind it: the best expression of Nosiola, a unique grape variety of Valle dei Laghi. “This wine has survived over the years: in the past decades Nosiola has been cultivated less and less, preferring the ideal varieties for the Classic Method of Trento” explains Carlo De Biasi, Cantina Toblino’s general manager. “Our winery has never stopped betting on this native Trentino vine”.

In fact, Nosiola is the only indigenous white grape variety of Trentino region, used to produce dry white wines and the sweet wine “Passito dei Passito”, or Vino Santo Trentino DOC.

This wine is produced with the grapes of the most suitable vineyards in Valle dei Laghi, where a suitable microclimate meets the best exposed, dry and gravel-rich soils. Only one tenth of the vineyards in Nosiola is suitable for the production of grapes used to produce Vino Santo Trentino DOC.

A wine story

 

Vino Santo represents a heritage of the valley and has always been made by the families who live here: “It was an elixir, it represented the tonic of the population. A tradition that was lost in the period between the two wars, but was revived in 1965 by Cantina Toblino” explains De Biasi.

“Our past director Giancarlo Ciurletti strongly believed in this wine”. Since then the production has never stopped and about 200 bottles are stored each year to become the historical memory of the winery.

 

Production

 

Vino Santo has been produced in the same way since ever: grapes must be very ripe in the vineyard and after picking they dry in the fruit cellar until the following spring. The berries dehydrate, evolve, but lose 80% of their weight. The sweetness is concentrated, the fermentation starts, then the wine ages for many years, at least 15. Throughout this period it goes through the oxidative phase, but everything is helped by the acidity that keeps the wine vital, dynamic and ready to face a long aging.

“Vino Santo can be defined the wine of patience” concludes De Biasi. A long wait for the winemakers, in the cellar, and for consumers. We now bottle 5 to 7 thousand bottles of Vino Santo. It is little more than one percent of our bottled production, but for us what matters is continuing the true tradition of our Valley “.
